Jerk Pineapple Chicken

It’s been a while since I posted a recipe. Mostly because it’s been a while since I cooked something so delicious I was compelled to tell you about it. But last night I made Jerk Pineapple Chicken and it was amazing. My friend Peyton, who I love more than bacon, gave me the recipe and once you make this you are going to want to send her flowers. It’s so good.

1 package chicken breasts (about 1.5 lbs) or chicken tenderloins

1 can of pineapple tidbits, juice set aside

1/4 cup of soy sauce (I use gluten free)

1/2-1 teaspoon red pepper flakes (depending on how much fire you want)

2 Tablespoons brown sugar

1 teaspoon Jerk Chicken seasoning (I used cajun seasoning because I didn’t have the other)

2 cloves minced garlic

1 tsp grated ginger

1 tsp cinnamon

1 tsp chili powder

1 Tablespoon cornstarch

1/3 cup finely diced onion

crushed roasted peanuts

olive oil

Whisk together soy sauce, pineapple juice, garlic, ginger, jerk seasonings, brown sugar and spices. Cut the chicken into bite sized pieces and place in marinade. Let the chicken marinate for at least 30 minutes. In the meantime, cook some rice (Jasmine is my favorite.)

In a hot skillet heat a tablespoon or two of olive oil then add onions. Cook until softened then add the chicken. Don’t dump it all in the skillet, use tongs to put the chicken, leaving the marinade. Once the chicken is cooked through, pour the sauce and the pineapple tidbits on top of the chicken and bring to a boil.

 

Cut back the heat and simmer for 20 minutes until the sauce begins to thicken. Serve over rice and top with crushed peanuts.

My stomach is growling. I’m so glad I have leftovers.

Rainbows, Unicorns & Justin Beiber

One of my very favorite things to do is listen to my girls talk to each other when they don’t know I’m listening. You might call it eavesdropping, but really I was cooking dinner (I’m posting that recipe later cuz it was AMAZING) and they were sitting at the kitchen table talking and playing.

Emma (5) was playing on my iPhone. “Hey Aubwey, you wanna see Justin Beaver?”

Aubrey (7) didn’t even look up from her drawing, “Yeah, sure. I just drew him under a rainbow, with girl hair and a unicorn.”

I stifled a laugh so hard that it physically hurt when I snorted.

Aubrey looked up at me. “You wanna see it?”

Do. I. Ever.

“The Dumb Justin”

“I hate me”

Aubrey went on to tell me that her best friend told her that The Beaver is in jail because, “He was drunk in the car.” I’m pretty sure she has no idea what drunk even means.

I couldn’t make this stuff up if I tried.

My Two Year Old is a Genius

Really. Somebody call Harvard. She’s totally ready for Med School. She’s not completely potty trained yet. But y’all. It’s HARD to not pee in your sleep.

Her Daddy likes to tell them the names of all their bones at bath time. Instead of, “Wash your leg.” He says, “Don’t forget your femur.”

So the other day Sadie just randomly busted out with, “Inna gonna hold Baby Biolet (Her cousin, Violet) and put her wight up on my cwabicle.”

NATCH, I had to grab the camera. Then she got all sassy and wouldn’t repeat herself.

I love how her response to, “I love you” was, “Good.”

Smug little booger.

And speaking of boogers, last night I made her blow her nose a bunch of times and said, “There we go. We finally got it.”

She stuck her finger up her nose to her second knuckle and said, “I pound my snot Momma.”

Writing Her Feelings Out

We’ve reached another milestone and I’m not sure I like it. After years of sitting in church sans children for seven years, my oldest has outgrown Children’s Church. It came as a total shock. I hadn’t even mentally prepared myself. One Sunday a few weeks ago, it just happened.

Aubrey left to go to Children’s Church then came back and whispered, “MOMMA IT’S NOT TIME FOR MY CLASS YET.”

And so it began. Now instead of leaning up against my husband, holding hands and listening to the preacher as my mommy induced PTSD takes a brief hiatus, Aubrey sits in between us, whispering a little too loudly and attempting to boss us around via notes scribbled on her church bulletin.

Aubrey is very expressive. If denied a doughnut before church it is not unusual for her to write a 300 word essay describing in vivid and misspelled detail exactly how she feels. If she isn’t allowed to wear her hot pink mesh, fingerless Madonna gloves purchased for an 80s themed party with her smocked dress there will be illustrations of “The saddest girl in the whole werld,” to occupy our time.

Last Sunday Aubrey scribbled furiously during the sermon and kept passing me her bulletin and whispering, “Your turn!”

“Emma snuck one.”

Aubrey whispered, “Can I have one?”

I shook my head.

“Come on!!”

“NO!” I hissed.

“Not cool!”

I whispered in her ear, “I am trying to listen.”

“DUMB, DUMB, DUMB.”

I guess that’s supposed to be me?

 

“I love you EVEN when you are mad at me!”

“I know that!”

 “You want to listen instead of writing me and that hurt my feelings.”

“Baby we come to church to hear God’s Word preached. I love you but I want to listen.”

“I give up.”

I snorted in church I was trying so hard not to laugh out out loud.

It’s probably a special kind of sin to gamble about what goes on in church on Sunday morning, but I’d be willing to bet $50 she doesn’t give up and writes a new essay next week. I’m pretty sure writing’s in her blood.
