Mommy Tips: Milk Substitutes
My husband has been out of town for work for most of the week which means I’ve been by myself and avoiding the grocery store like the plague. This morning there was exactly 3/4 cup of milk left to be divided equally between Aubrey and Emma’s cereal bowls and Sadie’s morning cup’o’milk (yes I said cup and not bottle, shocker.)
When Aubrey saw that the ratio of Cheerios to milk was less than her desired amount she whined.
Aubrey: MOMMA it’s going to be too crunchy too eat!
I stumbled to the fridge, grabbed the half and half and filled their bowls the rest of the way.
Aubrey: MO-OM! Is is going to be disgusting?
Me: It’s probably going to be the most delicious thing you’ve ever tasted. But don’t get used to it. We’re back to 1% once Daddy comes home.
Black Bean Enchiladas
Got to talking about this recipe with a friend and as long as I was going to type it up, I figured I’d share it with all of you. I ripped this out of a magazine sometime in the last 10 years… it’s origins are unknown.
2 cans of enchilada sauce
1 T olive oil
1 onion diced
1 small red pepper diced (I usually leave this out, I don’t know why.)
3 garlic cloves, minced
1 15oz can of black beans rinsed
10-12 corn tortillas, softened according to package directions
1-2 cups of shredded cheddar
Preheat oven to 425 degrees. Pour enough enchilada sauce into an ungreased 12×18 baking dish to cover the bottom.
Saute onions, peppers and garlic in olive oil on stove top until tender. Mix in black beans and 1/2 cup of cheese. Spoon the cheese mixture into softened tortillas and roll, placing enchiladas seam side down in the casserole dish. Top with remaining sauce and shredded cheese. Bake for 15-20 minutes or until cheese is melted.
I serve this with mexican rice, which you can buy at the store already made. You just have to microwave it for about 90 seconds. I won’t say the brand name cuz they ain’t paying me to!
My best friend in Fort Worth, TX is of Mexican descent and she used to tease me about my “white people enchiladas” until she tasted them! Enjoy!
Pray for Me
(Most writers post pictures of their cats curled around their laptops… *sigh*)
Pray for me and my family. I’ve just made the executive decision to finish my second book in the next 10 days. It’s a very achievable goal if I only get up from my desk to change diapers and pass out food. Fights will have to resolve themselves. I’m focused people.

Aubrey Teaches
This morning I was unpacking Aubrey (6) and Emma’s (4) back packs, removing all the work they had brought home and getting them packed up for a new day. I stacked Emma’s worksheets on the counter and Aubrey caught a glimpse of this sheet:
Aubrey: EMMA!!! Look at this mess! We can not have this!
Emma: Wellllll, I was jest in a huwwy and I scwibbled a wittle bit…
Aubrey: Uh, uh, uh. I need to come to your school and teach ya’ll how to color, you got a frowny face! We can NOT have this!
Aubrey flipped through the stack of papers to this page:
Aubrey: See Emma! You can do it if you only try!!
Emma smiled.
Aubrey: Momma, I need you to print some worksheets for Emma. The kind with the dots so we can practice her name… and I think maybe some color sheets. I’m going to work with her this afternoon.
Indeed.
